Paal Payasam {Kheer - Quick & Easy}

This is my go-to recipe for a simple dessert which requires only few ingredients and little effort. This always gives promising results and you will be more than happy when people shower you  with lots of sweet compliments after having this :D

Also this always has its place on the sumptuous vegetarian festive spread back home in Kerala :)

Paal Payasam

Ingredients:
1/2 cup Rice (I use basmati)
2 Tbsp Sugar 
Pinch of Salt
4 cup Milk
1/2 can Condensed Milk
Little Ghee
Few Raisins & Cashews & strands of Saffron

Method:

  • In a pressure cooker, add washed rice, sugar and 2 cups of milk. Also add a pinch of salt. (Do not add water).
  • Let this cook for a whistle or two and then open the pressure cooker lid when it is safe to. The rice must be cooked by now. 
  • Add the remaining 2 cups of milk and let it boil. 
  • Pour in the condensed milk and let it boil further for 3 mins, stirring all the while. 
  • Remove from fire and keep aside.
  • Heat little ghee in a pan, fry raisins and cashews to a golden brown color. Add this to the payasam along with few strands of saffron.

Notes: You can simply cook the rice in milk without the use of pressure cooker if you wish.
