Potato Croquettes

I remember my amma used to make fish croquettes back in my school days and it would vanish as soon as it came out of the frying pan. We used to struggle to eat them hot but still Yumm! Now these plain potato croquettes are a great vegetarian option for starters. Fry these and dip it in your favorite sauce for a delicious start of an evening :)

Summer is almost over but even a small citrus plant at home could brighten your day!

Ingredients:
4 Potatoes, boiled and mashed
1 Onion medium, finely chopped
1 Tbsp Ginger & Garlic paste
2 Green chilies, finely chopped
1/4 tsp Turmeric powder
3/4 tsp Garam masala 
1/4 tsp Black pepper, crushed
Salt, to taste
Few Coriander leaves, chopped
1 Egg, lightly beaten
1 cup Bread crumbs
Oil, to fry

Method 
  • Cook the potatoes and mash them. Keep aside to let it cool.
  • Heat a Tbsp of oil in a pan and add chopped onions. Once it starts to change color, add ginger-garlic paste and chopped green chilies. Cook until the raw smell goes.
  • Add the masala powders and saute the mixture.
  • Now add the mashed potatoes, salt and mix well again.
  • Add the chopped coriander leaves and saute for further few mins until well combined.
  • Shape the mixture into small round balls. ( Make sure the mixture is cool enough for you to handle it)
  • Beat an egg in a bowl with a pinch of salt and keep ready.
  • Dip the patties in beaten egg mixture first and then roll all the sides in bread crumbs.
  • Heat oil in a pan and deep fry these balls till its golden in color.
  • Drain on a paper towel and serve hot.
Notes: You can use plain flour mixed with some water to form a paste and use that instead of the beaten egg. Roll it in breadcrumbs and deep fry them. Your truly veg potato croquettes are ready :)

You could also try rolling them into balls and stick a mini cocktail stick into each instead of deep frying them. Arrange them on a nice platter and serve with tomato ketchup.
