Cakey Chocolate Brownies :D

Finally my first batch of brownies (cakey version) and I have to say I am pretty happy with the results :D Brownies fall somewhere between a cake and a cookie in texture; Personally I wanted to bake ones that are more towards the cake-side rather than fudgy. So when I came across the recipe for a cakey brownie, most naturally got prioritized to top of my to-do-baking list. The recipe is simple and very easy to whisk up and bake. Just a caution, the tray will be emptied much before you expect it to! 

Cakey Brownies:

Cakey Brownies!!!

Ingredients:

½ cup All Purpose Flour
1 tsp Coffee Powder (instant)
½ tsp Baking Powder
¼ tsp Salt 
½ cup Dark Chocolate, melted (I used the double boiler technique)
¼ cup Unsalted Butter, softened 
¾ cup Sugar
1 Tbsp Corn Syrup (original recipe says it gives a texture and nice shine to the chocolate although its optional)
2 Eggs
2 tsp Vanilla extract
3 Tbsp Whole Milk, lukewarm-ed

Method:
  • Preheat the oven to 180 C/fan 160 C/gas 4 and line an 8 inch square tin with parchment paper.
  • In a bowl, mix together the dry ingredients (flour, instant coffee powder, salt and baking powder) and keep aside.
  • In another bowl, whisk together the butter, sugar and corn syrup (if using), then add the eggs one after the other. Also mix in the vanilla extract and milk. 
  • Add the melted chocolate and whisk until the mixture is of thick and creamy consistency. 
  • Now add the dry ingredients and mix well until they are all combined. 
  • Pour the batter into the prepared tin and bake it for 25 minutes or until a thin skewer inserted into the centre of the cakey brownie comes out clean . Keep aside to let it cool completely before cutting.
Notes: I used a larger rectangular tray and hence the baking time was lesser than 25 mins. I also used self raising flour instead of plain flour and hence omitted the use of baking powder.
